Eggplant caviar should be made for winter in the summer when vegetables are cheap and full of vitamins. So, for the preparation of this dish will require the following ingredients:
- 3 kg of eggplants;
- 500 g carrots;
- 50 g onions;
- 2 kg of tomatoes;
- 300 ml of vegetable oil;
- 1 head of garlic;
- 100 ml of vinegar 9%,
- 2 pods of bitter pepper;
- salt - to taste.
Wash the eggplants, remove the stalks, put the vegetables on a baking sheet and send to bake in the oven for 30 minutes. Peel the onions, garlic and carrots. The first two ingredients are finely chopped, and the third is rubbed on a coarse grater. Fry onion until golden brown, remove from the pan and do the same with the carrots. Turn tomatoes into mashed potatoes using a blender.Cut baked eggplants into cubes and chop in a blender.
Bring the tomato puree to the boil with butter, put all the vegetables, salt, stir, simmer for 40 minutes over low heat. Then add garlic and simmer for another 10 minutes.

Cover and simmer over medium heat for 15 minutes. Then reduce the heat and continue to simmer the vegetables for another 15 minutes, stirring the mass from time to time.
